Description

板腱牛排 取自於肩胛部的板腱部位又稱嫩肩里肌,一頭牛僅能取出少量大約兩公斤的板腱,板腱的特色是中間有一根透明的嫩筋所有牛肉部為裡面獨有的,不同於嚼不動的白筋,板腱受熱膠化後,肉質軟嫩中富有「脆彈」的口感。
